Basque Cheesecake

Ingredients

  • 650 g cream cheese
  • 250 g mascarpone
  • 320 g sugar
  • 6 eggs
  • 1 egg yolk
  • 4 g fine sea salt
  • 415 ml heavy cream
  • 1.5 tsp vanilla extract
  • 2 tsp orange blossom water
  • 52 g all purpose flour

Instructions

  1. Butter up a 22.5 cm cake pan and press in a sheet of parchment paper. Add another sheet of parchment on top.
  2. In a stand mixing bowl, mix cream cheese and mascarpone on low speed until smooth.
  3. Gradually add sugar while mixing. Increase speed to medium and continue mixing until smooth.
  4. Add eggs one at a time on medium speed, then add egg yolk.
  5. Mix in sea salt, heavy cream, vanilla extract, and orange blossom water until smooth.
  6. Sift in all-purpose flour and mix until combined.
  7. Pour cheesecake batter into the cake pan.
  8. Bake at 205°C for 60 minutes. Let cool at room temperature.
  9. Once cooled, remove from pan and serve at room temperature.
