Ingredients

  • Salt
  • Liquid smoke

Rub

  • 14 g Paprika powder
  • 5 g Decaffeinated coffee powder (not instant)
  • 3.5 g Smoked paprika powder
  • 2 g Coriander powder
  • 5 g Granulated garlic
  • 0.5 g Cumin powder
  • 5 g Black pepper
  • 8 g Sugar

Bbq Sauce Texas Style

  • 1 EL Butter
  • 1 small Onion
  • 200 ml Brisket liquid
  • 200 ml Ketchup
  • 120 ml Apple cider vinegar
  • 50 g Demerara sugar
  • 1 EL Worcestershire sauce
  • Salt and Pepper
  • Hot sauce (optional)

Instructions

  1. Salt Brisket and marinate with Liquid Smoke overnight.

Variant 1

  1. Preheat oven to 200°C.
  2. Roast brisket for 60-70 minutes in oven-safe pan without a lid.
  3. Deglaze the pan with 500 ml of liquid.
  4. Reduce oven temperature to 120°C, thinly slice brisket, return to pan with sauce, and bake for 3-4 hours.

Variant 2

  1. Apply rub on brisket, place water in baking dish with rack.
  2. Bake in a 120°C oven until thickest part reaches 76°C (about 3 hours).
  3. Wrap brisket in foil and bake until it reaches 96°C.
