Broccoli in Garlic Sauce

Ingredients

  • 340 g broccoli
  • 3 garlic cloves
  • 1 ginger thumb
  • 0.5 fresh chili
  • 237 mL water or stock or reserved broccoli water
  • 0.5 tsp onion powder
  • 60 mL soy sauce
  • 2 tbsp brown sugar or white sugar + molasses or honey
  • 2 tsp mustard
  • 2 tbsp Marmite or oyster sauce
  • 2 tsp toasted sesame oil
  • 3 tbsp cornstarch or any refined starch
  • pepper
  • MSG or salt
  • cooking oil
  • sesame seeds for garnish
  • 200 g white rice (dry)

Instructions

  1. Cook the rice.
  2. Peel and chop the garlic and ginger with the chili.
  3. Put a steamer basket in a pot, add water, bring to a boil.
  4. Cut the broccoli into florets.
  5. Steam broccoli for 3 minutes, then cool in ice water.
  6. Save 1 cup of green steamer water if desired.
  7. Heat a pan with oil, garlic, ginger, and chili.
  8. Add water, soy sauce, sugar, mustard, Marmite, sesame oil, onion powder, and pepper.
  9. Dissolve cornstarch in water to make a slurry.
  10. Thicken the sauce with the slurry.
  11. Adjust sauce seasoning.
  12. Coat broccoli in sauce.
  13. Serve broccoli over rice, garnish with sesame seeds.
