Broiled Cookies

Serves: 6

Ingredients

  • 113 g butter
  • 200 g sugar
  • 1.3 cups powdered sugar
  • 5 g molasses
  • 1 egg
  • 6.7 g salt
  • 1.5 tsp vanilla extract
  • 1.5 tsp baking soda
  • 230 g bread flour

Mix-Ins

  • 100 g chocolate chips or other mix-ins

Instructions

  1. Get the oven heating to 190°C, convection if available.
  2. Melt the butter and mix in the sugar (and optional molasses) until smooth.
  3. Add the egg and mix until very smooth.
  4. Mix in the salt, vanilla extract, baking soda, flour, and chocolate chips or other mix-ins.
  5. Chill the dough if needed to make it easier to shape.

Baking

  1. Divide the dough into six portions and roll each into a ball.
  2. Flatten the balls evenly on a baking sheet.
  3. Turn the oven off and the broiler/grill on maximum.
  4. Place the cookies near the top and let the broiler brown the tops until golden. Be attentive as this step is quick.
  5. Return the cookies to the oven and bake until done.
  6. Let the cookies cool before serving.

Notes

Optionally, you can use 1 cup of granulated or brown sugar instead of powdered sugar.

Adjust salt as per personal preference.
