Buns

Serves: 6

Ingredients

  • 9 g instant yeast
  • 120 g whole milk
  • 320 g bread flour
  • 7 g fine sea salt
  • 20 g granulated sugar
  • 1 egg
  • 1 egg yolk
  • 28 g unsalted butter, softened

Roux

  • 20 g unsalted butter

Instructions

  1. Warm milk to 40°C, dissolve yeast and sugar, let sit for 15 min.
  2. Mix salt and flour.
  3. Put in mixer.
  4. Make roux: 2 Tablespoons (20g) and 6 tablespoons slowly heat until very thick.
  5. Mix for a couple of minutes, then add butter.
  6. Let rise for 1.5-2 hours in a lightly greased bowl.
  7. Divide into 6, fold into balls, roll on unfloured surface.
  8. Put between two baking sheets and let rise for another 45 min.
  9. Brush with egg, bake at 190°C for 15-17 min. Directly brush with butter.
