Chocolate Meringue Cookies

Ingredients

  • 2 eggs
  • 100 g powdered sugar
  • 100 g semi-sweet chocolate chips
  • 2 tablespoons butter
  • 20 g cocoa powder
  • 1 teaspoon instant espresso powder
  • 1 vanilla
  • 1 cream of tartar
  • 1 salt
  • cooking spray

Instructions

  1. Crack the eggs into a mixing bowl and separate the yolks.
  2. Beat the egg whites with cream of tartar until peaks form.
  3. Add powdered sugar and continue beating for about five minutes.
  4. Melt chocolate chips and butter together in the microwave.
  5. Mix in cocoa powder, vanilla, salt, additional chocolate chips, and egg yolks if using.
  6. Combine chocolate mixture with meringue.
  7. Scoop batter onto parchment paper-lined sheet pan.
  8. Bake at 180°C until surfaces crack and edges brown, about 15 minutes.
  9. Cool completely before removing from paper.
