Cinnamon Buns

Ingredients

Dough

  • 250 g bread flour
  • 80 ml milk
  • 7 g yeast
  • 30 g butter
  • 50 g sugar
  • 1 egg
  • 3.5 g salt
  • 0 vanilla

Filling

  • 65 g brown sugar
  • 0 salt
  • 0 melted butter
  • 8 g ground cinnamon

Marshmallow Glaze

  • 1 egg white
  • 65 g sugar
  • 0 corn syrup
  • 0 vanilla
  • 15 g butter

Instructions

  1. Warm the milk to body temperature and stir in the yeast.
  2. Melt butter, stir in sugar, add egg yolk, salt, and vanilla.
  3. Mix flour and butter mixtures, let sit to puff up.

Filling

  1. Mix filling ingredients, avoid adding too much melted butter.

Rolling And Baking

  1. Roll out dough, spread melted butter, add filling, roll up.
  2. Slice and place rolls on baking sheet.
  3. Let proof and bake at 200°C until golden brown.

Frosting

  1. Whisk egg white, sugar, and syrup over heat until mayo-like.
  2. Add butter and vanilla, whisk until smooth.
  3. Allow rolls to cool, top with glaze.
