Crispy Fried Mushroom Burger

Ingredients

Burger

  • 2 large aninoi mushrooms
  • 2 large my taki mushrooms

Dry Dredge

  • corn flour
  • salt
  • five spice

Wet Dredge

  • buttermilk
  • water

Instructions

  1. Poach mushrooms in kombu dashi and soy stock.
  2. Dredge mushrooms in dry dredge, then wet dredge, and fry until crispy.
  3. Assemble burger with classic burger sauce, American burger cheese sauce, crispy onions, pickles, and lettuce.
