Espresso Basque Burnt Cheesecake

Ingredients

  • 400 g cream cheese
  • 120 g brown sugar
  • 3 large eggs
  • 10 ml lemon juice
  • 12 g plain flour
  • 12 g instant coffee powder
  • 100 g fresh cream 45%
  • 60 g fresh cream 45%

Instructions

  1. Preheat the oven to 210°C (410°F).
  2. In a bowl, blend cream cheese and brown sugar until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. Add lemon juice and sifted flour.
  5. Dissolve the instant coffee in 100 ml warm cream, add 60 g cold cream.
  6. Pour on baking paper into 15 cm cake pan through a sieve.
  7. Bake for 35 min at 240 °C.
