Fondant Potatoes

  • Russet potatoes
  • Butter
  • Extra virgin olive oil
  • Garlic cloves, peeled and smashed
  • Rosemary sprigs
  • Thyme sprigs
  • Salt
  • Pepper
  • Chicken broth

Instructions

  1. Prepare the potatoes by cutting them into thick, even pucks.
  2. Dry off the potatoes after soaking in water.
  3. Heat a pan with butter and olive oil, then add the dried potatoes to get a golden brown color on the bottom.
  4. Flip the potatoes after getting a good color on the bottom.
  5. Add more butter, garlic, rosemary, and thyme to the pan, and baste the potatoes as they cook.
  6. Season the potatoes with salt and pepper before transferring to the oven.
  7. Pour chicken broth around the potatoes and bake at 425°C for 25-30 minutes until super soft.
  8. Once cooked, give the potatoes a final touch of butter, roasted garlic, and fresh thyme.
  9. Serve the fondant potatoes hot and enjoy!

Notes

Fondant means cooked in broth. These potatoes are elegant and flavorful.
