Ingredients
- Russet potatoes
- Butter
- Extra virgin olive oil
- Garlic cloves, peeled and smashed
- Rosemary sprigs
- Thyme sprigs
- Salt
- Pepper
- Chicken broth
Instructions
- Prepare the potatoes by cutting them into thick, even pucks.
- Dry off the potatoes after soaking in water.
- Heat a pan with butter and olive oil, then add the dried potatoes to get a golden brown color on the bottom.
- Flip the potatoes after getting a good color on the bottom.
- Add more butter, garlic, rosemary, and thyme to the pan, and baste the potatoes as they cook.
- Season the potatoes with salt and pepper before transferring to the oven.
- Pour chicken broth around the potatoes and bake at 425°C for 25-30 minutes until super soft.
- Once cooked, give the potatoes a final touch of butter, roasted garlic, and fresh thyme.
- Serve the fondant potatoes hot and enjoy!
