Garlic Cheese Bread

Ingredients

Dough

  • 200 g bread flour
  • 1 egg (can be omitted/replaced with milk)
  • 20 g sugar
  • 4 g instant yeast
  • 3 g salt
  • 80 ml warm milk
  • 30 g unsalted butter at room temperature

Garlic Sauce

  • 1 tsp minced garlic
  • 1 tsp mayonnaise
  • 1 tsp sugar
  • 0.5 tbsp chopped green onions
  • 1 tbsp egg (can be omitted)
  • 13 g unsalted butter at room temperature

  • 140 g mozzarella cheese (dry)

Instructions

  1. Beat egg and pour in mixing bowl (reserve 1 tbsp)
  2. Warm milk and proof yeast.
  3. Add the rest except butter. Combine and let rest for 10-15 minutes.
  4. Knead in butter and knead for about 5 minutes.
  5. Proof for 1 hour in the oven at 30°C.
  6. Mix butter, egg, sugar, mayo, green onions, and mix well. Then mix in garlic.
  7. Deflate, make a checkerboard pattern with a knife.
  8. Spread sauce, use a spoon to accentuate the pattern, press in mozzarella.
  9. Bake for 10 minutes at 170°C convection.
