red onions, thinly sliced

Instructions
Pickled Onions
- Put onions in a storage jar, boil remaining ingredients, pour over the onions, seal the jar, let cool.
- Lightly butter the outer sides of the brioche slices.
- Mix Gruyรจre and mayonnaise, season with nutmeg.
- Spread mixture evenly on the inside of the bread slices.
- Top with ham, onion strips, watercress, and another bread slice (butter side up). Press lightly downwards.
- Melt 1 tbsp butter in a frying pan. Toast sandwiches on each side for 3-4 minutes.
- Reduce heat if the bread browns too quickly.
- Bake in the oven at 200ยฐC for 10 minutes until the cheese is melted.
