Grilled Cheese Sandwich

Serves: 4

Ingredients

  • 4 EL softened butter for greasing
  • 4 EL mayonnaise
  • 220 g Gruyรจre, finely grated
  • some grated nutmeg
  • 20 g watercress
  • 4 slices farmer's ham
  • 8 slices brioche
  • butter for the pan

For The Pickled Onions

  • 2 red onions, thinly sliced
  • 125 ml water
  • 125 ml herb vinegar
  • 1 EL salt
  • 1 EL sugar
  • 1 TL peppercorns
  • 1 cardamom pod
  • 1 star anise

Instructions

Pickled Onions

  1. Put onions in a storage jar, boil remaining ingredients, pour over the onions, seal the jar, let cool.

  1. Lightly butter the outer sides of the brioche slices.
  2. Mix Gruyรจre and mayonnaise, season with nutmeg.
  3. Spread mixture evenly on the inside of the bread slices.
  4. Top with ham, onion strips, watercress, and another bread slice (butter side up). Press lightly downwards.
  5. Melt 1 tbsp butter in a frying pan. Toast sandwiches on each side for 3-4 minutes.
  6. Reduce heat if the bread browns too quickly.
  7. Bake in the oven at 200ยฐC for 10 minutes until the cheese is melted.
