Gulasch

Serves: 4

Ingredients

  • 900 g beef calf (Beef Shanks with or without Bones), trimmed
  • 900 g onions
  • 100 g oil, lard, or rendered beef fat
  • 35 g sweet paprika powder
  • 500 ml water with a splash of vinegar (red wine, beer, stock)
  • 0.5 tbsp tomato paste
  • 2 cloves garlic, crushed
  • salt
  • 1 tsp caraway seeds, crushed, chopped, or whole
  • 0.5 tbsp dried marjoram

Instructions

  1. Cut beef into large pieces, brown in fat, and set aside.
  2. Caramelize onions.
  3. Briefly toast paprika for a few seconds (3-4) and immediately deglaze.
  4. Add tomato paste, caraway seeds, marjoram, and garlic.
  5. Cook in the oven at 160°C for about 3-4 hours.
  6. Season with salt, sugar, lemon, and orange zest.
  7. Optional: Add coconut milk and curry powder.

Notes

Seasonings like salt, sugar, lemon, and orange zest are to be added according to personal preference.

Coconut milk and curry powder are optional additions for a different flavor profile.
