baking soda (if using dried chickpeas)

freshly squeezed lemon juice

Instructions
- Soak dried chickpeas in water for 6 hours; rinse.
- In a pot, boil chickpeas with water for 1.5 hours, removing foam.
- Add baking soda for smoother texture if using dried chickpeas.
- Cool the chickpeas and blend them in a food processor.
- Slowly add vegetable oil while blending.
- Add tahini, lemon juice, and salt, blending until smooth.
- Add ice cubes gradually to achieve desired texture.
- Refrigerate until firm, then serve garnished with olive oil and chickpeas.
