Hummus 2

Serves: 6

Ingredients

  • 500 g dried chickpeas (or canned)
  • 1 tsp baking soda (if using dried chickpeas)
  • 100 ml vegetable oil
  • 200 g tahini
  • 75 ml freshly squeezed lemon juice
  • Salt
  • Ice cubes

Instructions

  1. Soak dried chickpeas in water for 6 hours; rinse.
  2. In a pot, boil chickpeas with water for 1.5 hours, removing foam.
  3. Add baking soda for smoother texture if using dried chickpeas.
  4. Cool the chickpeas and blend them in a food processor.
  5. Slowly add vegetable oil while blending.
  6. Add tahini, lemon juice, and salt, blending until smooth.
  7. Add ice cubes gradually to achieve desired texture.
  8. Refrigerate until firm, then serve garnished with olive oil and chickpeas.
