Lazy Baguette

Ingredients

  • 120 ml water
  • 0.39 g yeast
  • 3.0 g salt
  • 120 g bread flour

Instructions

  1. Mix ingredients in a small glass container until they just come together. Adjust water or flour if needed.
  2. Cover and rise on the counter until doubled in size, then refrigerate overnight, or refrigerate immediately for a week.
  3. Prepare parchment-lined baking sheet.
  4. Stretch cold dough into a snake the length of the pan diagonally.
  5. Let rise for about an hour until puffy.
  6. Bake at 260°C, spraying frequently, until dark amber and done, 20-25 minutes.
