Parfait

  • shiitake mushrooms
  • secondass mushrooms

Reduction

  • shallots
  • madiraa brandy
  • red port

Instructions

  1. Roast mushrooms in butter, then glaze with mirin and soy sauce.
  2. Blend mushrooms with eggs, melted butter, and seasonings.
  3. Bake parfait in a water bath at 120°C for 20-25 minutes.
