Pepperoni Pasta

Ingredients

  • 500 g pasta
  • 2 red peppers, sliced thin
  • 1 onion, sliced thin
  • 3 tbsp olive oil
  • 5 calabrian chilli, seeded, plus 1 tbsp of the liquid they are packed in
  • 0.5 tsp red pepper flake
  • 2 cloves garlic, sliced thin
  • 2 tbsp tomato paste
  • 1 pint heavy cream
  • pecorino romano
  • salt
  • 1 tbsp cold butter

Instructions

  1. To remove the skin of the peppers, coat with a touch of oil and broil until slightly charred. Let steam for 15 minutes, then peel and slice.
  2. Slice onion and garlic. Prepare Calabrian chili.
  3. Saute onions in olive oil until translucent, then add peppers. Cook until softened.
  4. Add garlic, chili flake, Calabrian chilis. Cook until garlic softens.
  5. Add tomato paste and cook, then pour in cream and simmer until thickened. Blend until smooth.
  6. Cook pasta in salted water. Mix sauce with cooked pasta, butter, and pecorino Romano until creamy. Serve with additional cheese.

Notes

If you prefer less spicy, adjust the amount of chili according to your taste.

Feel free to add your favorite herbs or additional vegetables for more flavor.
