- Olive oil
- Salt
- Black pepper
- Crushed juniper berries (optional)
- Good bread for serving
Roasted Garlic Butter

fresh parsley (optional: tarragon + sautรฉed shallots)
- Black pepper + crushed juniper berries

salt (if butter is unsalted)
Instructions
Roasted Garlic Butter
- Slice garlic head horizontally, drizzle with oil, wrap in foil, and roast at 180โ200ยฐC (350โ400ยฐF) for ~30 min.
- Squeeze out cloves and mix with softened butter, herbs, and seasoning.
- Whip until smooth and chill.
Main Dish
- Heat olive oil in a large pan over high heat.
- Add onion wedges and sautรฉ ~1 minute.
- Add padrรณn peppers and cook to blister, seasoning with salt, pepper, and juniper.
- Add tomato chunks and cook ~1 minuteโjust to warm, not break down.
- Remove from heat and stir in a spoonful of roasted garlic butter to melt into the juices.
- Serve immediately with bread.
