Rice Paper Breakfast Wrap

Ingredients

  • 2 eggs, plus extra for dipping
  • 2 slices bacon, rendered (reserve fat)
  • 2 rice paper sheets
  • shredded cheddar cheese
  • everything bagel spice

Instructions

  1. Soft scramble the eggs in reserved bacon fat, pulling them slightly undercooked as they will cook again in the air fryer.
  2. Hydrate the rice paper by dipping it in beaten egg on both sides (instead of water).
  3. Lay the hydrated rice paper sheets on a clean surface, overlapping like a Venn diagram.
  4. Add a layer of shredded cheddar cheese, then the scrambled eggs, then bacon, then a little more cheese.
  5. Slowly wrap up the rice paper from one end to create a tube. Swirl to create a sealed seam.
  6. Sprinkle with everything bagel spice.
  7. Air fry at 190°C for 6-8 minutes. Flip and cook for another 6 minutes.
  8. Serve with ketchup if desired.
