Rice Paper Breakfast Wrap

bacon, rendered (reserve fat)

rice paper sheets
- shredded cheddar cheese
- everything bagel spice
Instructions
- Soft scramble the eggs in reserved bacon fat, pulling them slightly undercooked as they will cook again in the air fryer.
- Hydrate the rice paper by dipping it in beaten egg on both sides (instead of water).
- Lay the hydrated rice paper sheets on a clean surface, overlapping like a Venn diagram.
- Add a layer of shredded cheddar cheese, then the scrambled eggs, then bacon, then a little more cheese.
- Slowly wrap up the rice paper from one end to create a tube. Swirl to create a sealed seam.
- Sprinkle with everything bagel spice.
- Air fry at 190°C for 6-8 minutes. Flip and cook for another 6 minutes.
- Serve with ketchup if desired.
