Sesam Panna Cotta with Nectarines

Serves: 4

Ingredients

  • 3 sheets gelatine
  • 3 dl whipping cream
  • 5 g toasted sesame seeds
  • 40 g sugar
  • 1 tbsp tahini (sesame paste)
  • 2 nectarines
  • 1 lime
  • 1 sesame brittle bar
  • sesame for decoration, e.g. mixed white and black

Instructions

  1. Soak gelatine in plenty of cold water.
  2. Bring half of the cream, sesame seeds, and sugar to a boil, remove pan from heat.
  3. Squeeze out gelatine well. Add to the cream while stirring and dissolve.
  4. Add tahini and remaining cream, mix well, pour mixture through a sieve and distribute into molds.
  5. Cover and let set in the refrigerator for about 4 hours.
  6. Halve nectarines, pit, and cut into wedges.
  7. Finely grate lime zest, squeeze juice, and marinate nectarines with the juice.
  8. Chop sesame bar, unmold panna cotta onto plates, arrange with nectarines and sesame. Sprinkle bar on top.
