Smoked Meatloaf

Ingredients

  • 454 g ground beef
  • 454 g ground lamb or mutton
  • 454 g raw sausage meat
  • 2 carrots
  • 1 large onion
  • 3 eggs
  • 4 large baking potatoes
  • 1.5 kg dark greens (kale)
  • BBQ sauce
  • breadcrumbs
  • herbs & spices (garlic powder)
  • salt
  • pepper
  • oil
  • butter

Instructions

  1. Grate the carrots and onion and combine with all the meats, eggs, BBQ sauce, seasonings, and breadcrumbs. Mix thoroughly.
  2. Form into a loaf and transfer to a heat-safe cooling rack for smoking.
  3. Stab the potatoes, coat them in oil, and smoke them until soft over direct heat.
  4. Smoke the loaf over indirect heat at 110°C until the internal temperature is 71°C.
  5. Midway, rotate the loaf and potatoes for even cooking. The loaf may take around two hours and potatoes around three.
  6. Simmer the chopped kale with salt, pepper, water, and resting juices until tender. Add vinegar or BBQ sauce if desired.
  7. Cut and serve potatoes with butter and salt, flesh side up. Serve greens and a slice of loaf with BBQ sauce.
