- herbs & spices (garlic powder)

Instructions
- Grate the carrots and onion and combine with all the meats, eggs, BBQ sauce, seasonings, and breadcrumbs. Mix thoroughly.
- Form into a loaf and transfer to a heat-safe cooling rack for smoking.
- Stab the potatoes, coat them in oil, and smoke them until soft over direct heat.
- Smoke the loaf over indirect heat at 110°C until the internal temperature is 71°C.
- Midway, rotate the loaf and potatoes for even cooking. The loaf may take around two hours and potatoes around three.
- Simmer the chopped kale with salt, pepper, water, and resting juices until tender. Add vinegar or BBQ sauce if desired.
- Cut and serve potatoes with butter and salt, flesh side up. Serve greens and a slice of loaf with BBQ sauce.
