Spaghetti All'Assassina

Ingredients

  • 300 g fresh grape or cherry tomatoes
  • 225 g dry spaghetti (not bronze-cut)
  • 5 cloves garlic
  • salt
  • white wine (optional)
  • tomato paste
  • olive oil
  • fresh basil for garnish

Instructions

  1. Purée the tomatoes and dilute with an equal quantity of water, season with salt.
  2. Heat olive oil in a pan, cook peppers and garlic, stir in tomato paste and tomato broth.
  3. Add dry spaghetti, cook until water evaporates and pasta fries and browns.
  4. Stir in basil leaves before plating, garnish with pickled chilies if desired.
