Spaghetti All'Assassina

dry spaghetti (not bronze-cut)

garlic

- white wine (optional)
- tomato paste
- olive oil
- fresh basil for garnish
Instructions
- Purée the tomatoes and dilute with an equal quantity of water, season with salt.
- Heat olive oil in a pan, cook peppers and garlic, stir in tomato paste and tomato broth.
- Add dry spaghetti, cook until water evaporates and pasta fries and browns.
- Stir in basil leaves before plating, garnish with pickled chilies if desired.
