Uzbek Samsa

Ingredients

Dough

  • 360 ml warm water
  • 1 Tbsp salt
  • 480 g flour
  • 0.5 Tbsp sugar
  • 240 ml melted clarified butter
  • Sesame seeds
  • 1 Egg
  • 1 tbs dry yeast

Filling

  • 3 medium onions
  • 750 g meat
  • Salt and pepper to taste
  • Cumin seeds to be crushed

Instructions

  1. Keep warm water in a bowl and add sugar, dry yeast, and salt. Mix well. Then add flour and knead the dough.
  2. Ensure the dough is neither too soft nor too hard.
  3. Cover and let the dough rest for about 20 minutes.
  4. After resting, roll out the dough using flour to prevent sticking.
  5. Fold the dough and seal the edges.
  6. Brush melted butter over the dough.
  7. With a knife, gently cut the dough into slices.
  8. Dice the onions finely and mix with the meat or vegetables. Season with salt, pepper, and crushed cumin seeds.
  9. Place a tablespoon of the filling mixture on the dough.
  10. Roll the dough into triangles, sealing the edges.
  11. Preheat oven to 200°C.
  12. Brush the Samsas with beaten egg for an egg wash.
  13. Bake the Samsas for about 30 minutes until golden brown.

Notes

Samsas are traditional Uzbek pastries filled with meat or vegetables.

Adjust seasoning and filling according to personal preference.
