900 g skinless, boneless chicken thighs, cut into 1 1/2-inch cubes
Instructions
Whisk together yogurt, lemon juice, oil, ginger, salt, smoked paprika, mild paprika, black pepper, cumin, and cayenne pepper in a medium bowl.
Place chicken in a large resealable plastic bag. Pour in marinade and seal bag, removing as much air as possible.
Place in refrigerator and marinate for 4 to 8 hours. (19 hours and 8 hours indistinguishable, but very good, 4 hours very good, 2 hours a little bit chewy. But all are good).
Notes
Lemon juice can be adjusted or omitted based on preference.
