Yogurt Paprika Chicken Marinade

Ingredients

  • 240 ml plain yogurt
  • 60 ml lemon juice from 2 lemons
  • 45 ml extra-virgin olive oil
  • 2 tbsp finely grated peeled fresh ginger
  • 1 tbsp kosher salt
  • 2 tsp smoked paprika
  • 2 tsp mild paprika
  • 1 tsp freshly ground black pepper
  • 0.5 tsp ground cumin
  • 0.5 tsp cayenne pepper
  • 900 g skinless, boneless chicken thighs, cut into 1 1/2-inch cubes

Instructions

  1. Whisk together yogurt, lemon juice, oil, ginger, salt, smoked paprika, mild paprika, black pepper, cumin, and cayenne pepper in a medium bowl.
  2. Place chicken in a large resealable plastic bag. Pour in marinade and seal bag, removing as much air as possible.
  3. Place in refrigerator and marinate for 4 to 8 hours. (19 hours and 8 hours indistinguishable, but very good, 4 hours very good, 2 hours a little bit chewy. But all are good).

Notes

Lemon juice can be adjusted or omitted based on preference.
